There are certain foods that really satisfy me when I eat them. Frequently, it’s a nice piece of meat with a side of vegetables that I get at a favorite fine restaurant. But occasionally, I find a non-meat food that really fills me up and leaves me wanting nothing more. For a meat eater, that’s a big deal. Some of my favorite foods belong to the legume family. Not only do I like almost every bean I’ve ever eaten, one of my favorite legumes is the chickpea.
Pam and I have perfected the art of making hummus. Chickpeas, tahini, olive oil, salt, garlic, and lemon juice in the right proportions, served with some warm pita breads is one of my favorite snacks or side dishes.
Recently, I found an article that contains 5 recipes for using chickpeas as the main ingredient. The one I really want to try soon is the last one–the chickpea soup.
It’s a good thing Winter is coming on fast here in the PNW–soup weather is here and I’m going to have to give that chickpea soup a try.
